For a long time, stout beers were the go-to drink for a rich, foamy experience. That changed when nitrogen infusion crossed over into cold brew coffee. By the mid-2010s, nitro coffee had emerged as one of the most recognisable innovations in speciality coffee.
Most outlets serve it on tap, with that familiar cascading, foamy head any stout beer drinker would recognise. At December Yaupon, they serve it both on tap and in ready-to-drink formats – though it wasn’t the beverage that started it all.
“We originally focused on yaupon espresso but transitioned to yaupon nitro cold brew in cans because it is more scalable,” Ian explains.

“There’s a bit of lifting, but the process is pretty simple overall,” he reassures. Keeping temperatures low is essential for minimising microbial activity, so as he puts it, “the kegerator is plugged in during the drive to stay cold.” After that, the system is ready to serve fresh nitro-based beverages.
“Once the event starts, we start pumping out fresh yaupon nitro cold brew for our customers,” he says. It is a system that delivers quality results – though not as fast or conveniently as a more modern commercial nitro coffee machine like the Hardtank Hardtap.
