This chocolate and pepper infusion has the subtle aroma of tonka beans. Its blend of bitter cocoa and spicy pepper makes it the ideal base for tomato margaritas.

You'll Need:

  • Baby Hardtank
  • Aromatic cocoa beans 300 g
  • Tonka beans 5 g
  • Fresh chilli pepper 50 g
  • Bell pepper 50 g
  • Vodka 4 L

Step 1

Grind the cocoa beans with tonka beans in a blender.

Step 2

Finely chop the fresh chilli pepper and bell pepper.

Step 3

Blackcurrant Syrup

Blackcurrant Syrup

This recipe is the perfect base for fruit-flavoured cold brew to bring out the fruity notes of your chosen coffee, making it perfect for experimental coffee shops.

You'll Need:

  • Concentrated blackcurrant juice 1.2 L
  • White sugar 1200 g
  • Cold brew coffee 2.4 L (recipe here)
  • Fresh mint 30 g
  • Lime zest 30 g
Our blackcurrant syrup is the perfect base for fruit-flavoured cold brew.

Preparation instructions

Step 1

Combine everything in a blender.

Step 2

Blend until the lime and mint are fully ground.

Step 3

Strain through a very fine sieve – it’s important that there is no pulp at all!

Tip:

Check the syrup’s taste for acidity levels. If necessary, add tartaric or malic acid.

You'll Need:

  • Lemon acid 3 g
  • Frozen lychee puree 850 g
  • Sugar 200 g
  • Xanthan gum 5 g

Preparation instructions

Step 1

Combine lemon acid, frozen lychee puree, and sugar in a blender.

Step 2

Blend until the sugar is completely dissolved.

Step 3

Add the xanthan gum to the syrup, then gently mix using the pulse mode.
