The Derby

This is a dry cocktail, rounded with a bright aroma of flowers, citrus, and dried fruits. It’s a luxury drink and combines the natural spice of whiskey with the sour notes of lime for a unique drinking experience.

You'll Need:

  • Oolong whiskey 45 mL (recipe here)
  • Orange liqueur 15 mL
  • Red vermouth 15 mL
  • Lime juice 15 mL
  • Ice 200-250 g
  • Lime zest

Preparation instructions

Step 1

Combine oolong whiskey, orange liqueur, red vermouth and lime juice in a shaker glass.

Step 2

Add ice to the shaker and shake for 20 seconds.

Step 3

Strain into a chilled glass.

Tip 1:

Use a cocktail glass or a rock glass with ice.

Incorporate tea into a traditional Highball for a distinctly natural flavour that is just as good on a summer day as it is an aperitif.

You'll Need:

  • Ice 140 g
  • Oolong whiskey 40 mL (recipe here)
  • Soda water 80 mL

Horseradish Shots

Horseradish Shots

Horseradish shots give you a unique menu item to stand out and capture your guests’ curiosity. Use them as a base for cocktails or infusions to expand your drinks programme.

You'll Need:

Horseradish Shots recipe

Preparation instructions

Step 1

Peel the horseradish and cut it into small cubes. Blend on the 'Vegetables' setting.

Step 2

Place the horseradish in the basket, distributing it evenly.

Step 3

Pour vodka into the Hardtank.

Step 4

Set the programme for 30 minutes.

Tip 1:

The liquid should be white in colour, with a bright spiciness and a floral aftertaste.

Tip 2:

Horseradish absorbs a lot of moisture. After preparation, you can transfer the pulp from the basket into cheesecloth and squeeze out the liquid.

A light cocktail that combines rose and jasmine for a herbal, refreshing aftertaste. It’s perfect for bars and restaurants on summer nights!

You'll Need:

  • Rose & jasmine infusion 40 mL (recipe here)
  • Jasmine syrup 20 mL (recipe here)
  • Lime juice 10 mL
  • Ice ≈140 g
  • Ice for serving 100 g

For serving, use a wine glass or a rocks glass. Ideally, use a single clear ice cube.

Hola Papi

A creamy, citrusy cocktail, the Hola Papi blends tequila with fruit for a tangy but smooth drink that is perfect for high-end drinks menus.

You'll Need:

  • Tequila 5 L
  • Lemon myrtle leaf 100 g
  • Blood orange juice and/or grapefruit topo chico
  • Salt
  • Baby Hardtank

Preparation instructions

Step 1

Add lemon myrtle leaf to the basket and close the lid.

Step 2

Pour all tequila directly into the device chamber.

Step 3

Set the programme to "No Water" and infuse for 60 minutes.

Step 4

Top up the salt-rimmed glass with blood orange juice, grapefruit topo chico, and a pinch of salt.

Tip 1:

Serve with a lime wedge.
